Breakfast "toast"


This is my version of Breakfast Toast from the recipe book Ani's Raw Food Deserts, by Ani Phyo

I wanted to create both savory and sweet versions of her "toast".

I used my oven set at the lowest setting to "dry" the mixture.

In a large bowl combine

2 1/4 c filtered water

1 cup whole flaxseed

1 cup buckwhet groats

2 TBSP chia seeds

1/4 tsp sea salt

Let this sit for about 20+ minutes until it becomes gelatinous.  Both the flax seeds and chia seeds will thicken the mixture.

Once thickened add

 2/3 cup black sesame seeds, I used black because it offered a nuttier flavor to me and a more colorful toast

1/4 cup finely chopped currants or raisins or try goji berries or other dried fruits

For fun try a variety of spices and/or herbs like ground cinnamon with the currants/raisins

I might try cacoa nibs next time and add a touch of espresso and/or mesquite powder

Or omit the fruit and add fresh herbs such as rosemary for a more savory toast perhaps adding your own touch of crushed nuts such as hazelnuts.

Evenly spread the mixture to about 1/4" thick on a air baking sheet using a spatula.

Place in oven on lowest setting available.  Remove after 2 hours and cut into 9-12 slices depending on your serving size.  Return to oven for another hour.

Take out and flip each piece then return to oven for 2-3 more hours depending on how crisp or chewy you prefer the toast.

I store in the frig in an air tight container and it should  last for a couple weeks except my husband gets ahold of it and it's gone after a week.
