These have to be my absolute favorite healthy cookie!!! They are gluten free, dairy free and egg free - enjoy!
In a bowl combine
1 TBS coconut milk plus EVO to equal 1/3 cup
1/4 cup grade A maple syrup
1/4 tsp sea salt
1 tsp pure almond extract
mix thouroughly
Add 1 cup almond meal (ground almonds)
1/2 c coconut flour
1/2 to 1 cup shredded unsweetened coconut
1/2 cup finely ground cashews
Optional: 1 tsp xanthan gum powder
Roll into balls and flatten, I use a fork to "criss cross"
Bake at 350F approximately 12-15 minutes. Cool on a wire rack. They will be crumbly until cooled
