Raw Hazelnut Truffles...........and Brownies


For this recipe you will not need an oven.  Yep no cooking involved on this one which makes it even quicker and easier.

I have included 2 options and variations depending on your dietary needs/wants.  The truffles are more a "treat".  Adding the oatmeal or almond meal makes them more appropriate to take out on a hike to the mountains or a post workout snack.

To make the truffles:

In a food processor combine 3 c raw hazelnuts, 2 TBS raw chocolate agave syrup and enough coconut oil to make it stick.  Careful not to add too much.  I add a TBS at a time.

Those of you who would like to make without agave may use cocoa powder and 5-6 dates to sweeten.  Adjust your ingredients to have a good consistency but not too sticky.

Roll into walnut sized balls then roll into unsweetened medium grated coconut.

TO MAKE THE BROWNIES:

Using the above mixture and you have 2 choices for binding into brownies.

Either oatmeal or almond meal.

If using oatmeal add to food processor approximately 1.5 cup and pulse until combined.  Press firmly into a 9x9 glass dish.  Cut into squares

If using almond meal combine in a bowl approximately 1 cup and mix thouroughly.  Press firmly into a 9x9 glass dish.  Cut in squares.

I individually wrap for taking on hikes.
