1 C quinoa cooked according to package instructions
Cool and set aside
Chop 1 red bell pepper, 1 yellow bell pepper, 1 jalapeno pepper
1/3 C kalamata olives pitted and crushed
1 handful of fresh cilantro chopped finely
3 cloves garlic finely minced
Add the above to cooled quinoa
Add 2 TBSP + olive oil and juice of one lemon
sea salt to taste (optional)
