Gluten Free, Dairy Free Thai Quinoa - compliments of my client Shari Maccarone Bailey 1 (14 oz) can coconut milk ...recipes calls for light but I used regular 1/4 cup water 1/2 tspThai red or green curry paste 1/2 red bell pepper, diced 1 tsp dried basil 1 tsp sea salt 1 Cup Organic quinoa, rinsed well Add liquid, curry paste, bell pepper, basil and salt to saucepan. Bring to a light boil. Add quinoa and bring to a boil again. Reduce heat to simmer and cook for 20 mins Remove from heat and let sit for 10 min before serving
