Here is a wonderful nutty option instead of using legumes. Serve with sliced red and yellow peppers, celery sticks or wrap in lettuce leaves with cucumber and sprouts for a healthy wrap.
In a food processor place 3C walnuts (unsalted raw) or combination of walnuts and cashews to equal 3 cups.
3-4 cloves fresh garlic
Handful of fresh rosemary leaves only
1/3C sun dried tomatoes
1/3C mild or hot pickled red peppers OR roasted red pepper (See Sweet Heat Carrot Soup recipe for how to roast pepper)
Process until smooth, adding EVO to cream to preferred consistency. I like mine a little more coarse.
