Yam Frittata


Here's a wonderful option to a quiche.

I use sliced yams (or sweet potatoes) as the crust. They can be either pre baked or raw just remember it'll take a bit longer if not pre baked.

You will need:

2 yams sliced - I leave skin on

1C thinly sliced onion

1C mushrooms

2C spinach

2 TBS pesto (recipe can be found under recipe link)

EVO

Optional: 1/2C peppered goat cheese crumbled

Preheat oven to 375

In a deep dish glass baking dish slice yams into approx 1/4" rounds and line bottom of dish. Crumble goat cheese over the yams. Set aside.

Heat EVO over medium heat and carmelize onion and saute' mushrooms until tender. Spread into dish over yams/cheese.

Lower heat and add spinach to wilt then add to dish.

In a medium mixing bowl combine 8 egg whites (yolks optional) and 1/4 C almond milk, and pesto whisk until frothy. Pour over yam vegetable mix.

Bake at 375 for approximately 40 minutes or until golden brown.
